Campfire Ham & Cheese Sandwiches w/ Celery Sticks

Just butter your bread, slightly blacken your ham and bread on both sides, put the ham on the bread, then the cheese. It'll taste like you're at a campfire. Yum.

Grilled Salmon Burgers & Homemade Cajun Steak Fries!

Today I made an amazing lunch from leftover salmon cakes, and a potato that needed to be eaten before it went bad.




The trick to great fries is to bake the potatoes in the microwave first, then cut them for shape, then fry 'em in oil. I learned this trial and error years ago. These are my first amazing homemade fries!


I buttered one side of each bread slice, but toasted both sides.


I seasoned my fries with:

Cayenne
Black Pepper
Salt
Onion Powder


Fryin' & Grill'n

I of course made myself a duplicate sandwich which I chowed down on and enjoyed.

My Husband Made Dinner For Me!

My dear husband noticed that I was not feeling well and offered to go on an ice cream sandwich run for his pregnant wife! Aww. I napped and then took a phone call from my sister while my husband was out. When he returned, he brought with him Klondike bars, pizza, hot dogs, yellow American cheese slices, and hot dog buns! Then he proceeded to make cheese dogs for us:) I asked if he minded if I ate an ice cream sandwich and had dessert first while he was cooking. He didn't mind, and even helped me eat the ice cream sandwich. I pulled a jar of pickled beets from the cupboard to eat as a side. I think they about grossed Anthony out but he put up with me eating the pickled beets with the delicious dinner he prepared for us. I think his dinner and dessert did the trick. I'm feeling a little better already.

Amazing Chef's Creation!

I made a chicken pancake sandwich for lunch. I toasted two pancakes leftover from breakfast, squirted lots of horseradish sauce on one, ripped some romaine lettuce leaves from a head of lettuce, washed and squeezed them dry before adding them to the beginnings of my sandwich, loaded a couple pickle slices on top of the lettuce, and finally I put the chicken patty on the other pancake. While the pancakes were toasting, and the chicken patty was being zapped in the microwave, I cut a huge nectarine in half, quartering one half to eat for dessert, and bagging the other half for later. I completed my lunch with a tumbler of sweet tea. I would highly recommend this amazing lunch to all! The pancakes used as a sandwich ingredient reminded me of Dutch Country potato bread a little bit. The sandwich as a whole was soft, sweet, and savory with a kick.

Southern Labor Day Picnic

I asked Anthony what he wanted for dinner- a Labor Day picnic meal or lasagna. He said a picnic! I got some tea bags out and started boiling some water. I put some frozen sweet potato waffle fries and a couple frozen chicken patties on a baking pan, and stuck it in the oven at 425 degrees for 20 minutes. I washed up some red grapes for a healthy edible garnish. I poured my freshly brewed tea over some ice and sugar. I sliced then toasted a couple French hamburger buns, slathered chipotle mayo on them, and then added some romaine lettuce. Last, I placed the cooked chicken patties on our sandwiches, and the waffle fries on our plates. I had planned on serving ice cream sandwiches for dessert, but we were too full! We had an enjoyable night on the back porch:)

Anthony's Lunch

I packed another lunch today. This is getting to be quite fun. For Anthony, I sent a sandwich, some corn chips to change it up, and some cashews with dried cranberries since we are out of protein bars.

Sack Lunches

My husband needed a sack lunch for grad school so I pulled some things from the fridge and began making him a sandwich. Then I thought, "why not go ahead and make myself one too?" And so I wrapped a sandwich each for both of us. Of course I packed a few extras in the sack lunch for my dear husband so he would have some snacks should he need them. I added a couple kosher pickle sandwich slices to my sandwich come lunch time. I did not send any pickles along for the husband as he is not a fan of them.
