Wide Noodles For Shastya!

I was trying to think of something tasty and nutritious to make for Shastya for lunch. We had lots of green vegetables in the fridge, so I wanted to incorporate them into our meal. I remembered we had some leftover wonton wrappers so I decided to cut them into wide strips to make wide noodles! Anthony and I had had wide noodles in China and loved them! Shastya's and my lunch could not have been more perfect, complete with Shastya slurping down her noodles! Our veggies included zucchini, asparagus, and broccoli.

Chow mein

This is a very fast and tasty dinner to prepare. The noodles take three minutes to cook. You can be slicing your add-ins, and frying them while you cook your noodles. Then just combine everything and season it.


Ingredients:

Chow Mein Noodles
Bell Pepper
Onion
Carrots
Chicken
Iceberg Lettuce
Scallions
Celery
Soy Sauce
Black Pepper

Fast & Easy Vegetable Lo Mein

This afternoon I went walking with a friend. When I got home, it was time to make dinner! I needed to think of something fast because it was already 4:30 p.m. I remembered seeing a picture of vegetable lo mein on Pinterest sometime recently. I could do that easy, no problem, had all the ingredients on hand. I love lo mein, and tonight's lo mein by no means disappointed.


Fast & Easy Vegetable Lo Mein

Whole Wheat Thin Spaghetti
Soy Sauce
Minced Garlic
Water

1/2 Sweet Onion
1/2 Green Bell Pepper
2 Thick Carrots
Celery Stalk & Leaves
Vegetable Oil
Pepper & Salt
Ground Nutmeg
Cayenne Pepper

1/2 Bag Frozen Veggies
Ramen Noodles (without seasoning packet)
1/2 Vidalia Onion
1 1/3 Cups Water
Curry Powder
Cajun Seasonings
Romaine Lettuce
2 Eggs

Fried Noodles Du Jour

Anthony was home for lunch today so I made fried noodles du jour. Some people have a sandwich for lunch every day. Why not noodles? The ingredients I used today were:

ramen noodles
beef seasonings
vegetable oil
Worcestershire sauce
1/2 a vidalia onion
2 gourmet cucumbers
1 can yellow sweet corn with liquid
whole cashews

Asian Noodles

For lunch I made Asian noodles. Today I combined ramen noodles, beef seasonings packet, Worcestershire sauce, vegetable oil, chicken lunch meat, garlic cloves, fresh corn, water, gourmet cucumbers, and lollo rossa lettuce. Anthony and I really enjoyed the dish. The mellow flavors really reminded us of being in China this summer. The chicken lunch meat reminded us of tofu; the lettuce reminded us of bok choy, and Worcestershire sauce has a slight fish flavor. Read the label. Did you know that anchovies are listed as an ingredient?

What To Do With Leftovers

I asked my husband what he wanted me to make for lunch. I told him we had leftover fish and corn. I asked him if he wanted a salad or pasta created from the leftovers. He replied pasta. I tried to think if there were any other leftovers that would go well with a pasta dish- sugar snap peas. Then I remembered seeing a similar dish on Pinterest that also had carrots in it. By the time I was done here are the ingredients I came up with:














My husband and I both liked the fish better the second time around. You just never know, some people throw away leftovers, but I like to take them to a new level!
