BBQ Chicken Pizza Lunch Date

At church this morning I began thinking, hmm, I could make barbecue chicken pizza for lunch. I just wasn't sure if we still had barbecue sauce in the fridge, and if we did, if it was still good. Upon arriving home and searching the fridge I discovered some delicious and ready to use barbecue sauce. I began piling ingredients on the island.

I am so thankful that my Gramma bought us a bread machine for a wedding shower present. I love using it to make doughs, especially pizza and knots. I quickly threw ingredients into the bread machine canister only to realize I was a little short on flour. Reaching down in the cupboard I pulled the corn meal thinking it could substitute. For some reason, the bread machine error light came on. The dough had not risen yet. I unplugged the machine hoping to restart it. After plugging it back in the same light and frozen computer screen reappeared. I added more cornmeal to thicken the goop so I could remove it from the bottom of the canister. I added and added cornmeal. Turned out to be one of my favorite pizzas that I have made!

Waterfalls

Anthony and I love hiking. Not only is it fun to experience nature together, it's often free. We especially like hiking near waterfalls. They are so majestic and powerful, very telling of their Creator.

Romantic Walks

Anthony and I love going for walks. We have been to the SC Botanical Gardens on a number of occasions. Nothing like enjoying all the pretty scenery, talking, and holding his hand.







Lancaster County, PA

My husband and I recently went to see family in Pennsylvania. A trip to PA is hardly complete without viewing all the gorgeous rolling hills, farms, and silos of Lancaster County.










Sausage & Vegetables

Thinking about what to make for dinner, I thought I would use sausage, zucchini squash, and yellow squash. I thought I'd use squash because we have a lot of it. I decided on sausage from the meat drawer which also included fish and chicken because we had eaten those other meats recently. The original plan was to toss up the sausage and squash with pasta, greens, and some kind of cream sauce. I grabbed a can of New England clam chowder to use as a base for my sauce. I had a head of red oak lettuce to throw in the pan right when the dish was about done. I also pulled the last of the baby carrots from the fridge and a whole onion. Then I remembered we already had pasta a couple times in the last day or so. I promptly changed my plans to sausage and vegetables. I figured the squash would be a lot of carbs in the absence of pasta. I put the clam chowder and red oak lettuce away. I cut the onion in half so as not to overpower the dish. I cooked the sausage, onions, and carrots first since I knew they would need the most time, later adding the squash, water, and then the leftover broccoli. Dousing it all with Worcestershire sauce at the last second, I then added pepper, salt, and a lid. I wanted the sausage and vegetable flavors to really shine so I waited to season.

Glorified Canned Chicken Noodle Soup


  • 1 can of chicken noodle soup
  • 1 handful of colorful bell mini peppers
  • a few dashes of cayenne
  • leftover chicken bruschetta
  • 1 head of tender green tango lettuce
