Apple Lime Gingerbread



We had a mid-afternoon meal today. It included soup and apple lime gingerbread. I added the leftover pulp I had from juicing yesterday to my gingerbread recipe. We loved this gingerbread with fresh apple, lime, kiwi, and ginger fibers in it! I used the gingerbread recipe from my Better Homes & Gardens New Cookbook Celebrating The Promise Limited Edition. I think every kitchen should have such a reference tool. I got this big thick book when I was living on my own. I had frequently given similar large books to friends and family as wedding gifts. It's the gift that doesn't stop giving. Timeless. A kitchen dictionary.

Mom's Pasta Sauce



Growing up, my Mom often added zucchini, yellow squash or both to our spaghetti sauce. Other times, she made the best big meatballs to go with the sauce. Tonight, I added yellow squash to my sauce and thought of my Mom.







Spicy Apple Ginger Lime Juice


Nice and spicy. Anthony said it was hotter than ginger ale! This was our drink before dinner. I saved some of the pulp to make a fruit bread or fruit muffins with it. I got that idea off of Pinterest today from a pinner that pinned a carrot juice pulp cake recipe from cookingforengineers.com.

Spicy Apple Ginger Lime Juice:

3 Granny Smith Apples
Piece of Ginger Root
1 Lime
1 Kiwi

Orange Spice Pancake:

1 leftover pancake
1 sliced orange
Major Dash of Ginger
Major Dash of Cinnamon

Arduino Tutorial Date With Anthony

For starters, we went to the arduino website. We found a tutorial there for us to work through. We then plugged in the arduino (mini computer) to a laptop for power via a USB cable. Second, we connected the arduino to a breadboard (creme colored rectangular thing/ temp circuit board). Third, we connected an LED light to the arduino via the breadboard. Fourth, we used the laptop to program the arduino to control the LED light. So cool. Part of the time it was hard to concentrate on the tutorial because the tutor was so cute.








Shari's Dark Super Secret Citrus Chocolate Sauce



Just another epic day in the kitchen. Every time I opened the fridge today I saw a glass with mysterious contents that were rather murky almost fermented looking. Finally, this evening I decided to do something with the nasty glass of liquid before it officially went bad. Slowly, a plan formed in my mind. My plan involved chocolate and pancakes . . .

Contents of the nasty glass (day old blended fresh grapefruit & green apple plus ice cubes)
Cocoa
Non-fat yogurt






















Rosemary Thyme Grits



Rosemary and thyme are great healthy alternatives to butter for flavoring grits. Just heat 1/4 cup of grits, 1 cup of water, and a dash of salt in a bowl in the microwave for four minutes. When the grits are finished cooking simply add a dash of rosemary and a dash of thyme and voila!

Grapefruit Green Apple Smoothie



Anthony made a smoothie for me tonight. He put a red grapefruit, a granny smith apple, ice, and some yogurt in it. It was delicious.


Rice Bowls With Vegetable Topping


Rice:

1 1/2 cups Long Grain White Rice
3 1/2 cups Water
1 1/2 tsp. Salt
1 Tb Oil

Topping:

1 Small Head Broccoli
15 Stalks Asparagus
1 Can Yellow Sweet Corn Drained
2 tsp. Chopped Garlic
2 1/2 Tb Soy Sauce
Couple Dashes of Salt

Pasta With Alternative Sauce



This evening I cooked noodles while I created my own vegan sauce. I am not vegan but my pasta topping did happen to be made up of vegetables exclusively. I sliced up a yellow squash and threw it in the pan.  Next, I added a can of spinach. Finally, a can of navy beans completed my alternative pasta topping. The resulting flavor and texture reminded me of mac & cheese, creamy. I then "googled" "pasta sauce alternative" to see if I was far from the mark. The first two interesting articles I read were more about pizza sauce alternatives. The third was about healthy alternatives for pasta sauce.




Splendid Salads


Ingredients:

1/4 Head Iceberg Lettuce
1/2 Green Pepper
2 Stalks Celery
1 Yellow Squash
4 Slices Lunch Meat Ham
2 Sliced Cheese
Small Handfull Seasoned Tortilla Chips
2 Tb Bacon Ranch Salad Dressing
Ground Black Pepper
