Shari Garland's Yogurt Chana


A friend recently posted on Facebook about a dish made with chickpeas. I decided to make something similar. I was going to put potatoes in it too, but I forgot. We really enjoyed the dish I came up with, and Anthony and I both got seconds!

Shari Garland's Yogurt Chana:

1 TB Olive Oil
2 Tsp. Amchur Powder
2 Tsp. Rasam Powder
1 1/2 TB Ginger Paste
1 Onion
1 Garlic Bulb
2 Small Tomatoes
3 Cups Chickpeas in Water
1 1/2 Cups Greek Yogurt
2 Tsp. Salt

1. Saute spices in olive oil.
2. Add vegetables. Cook until done.
3. Remove pan from heat. Add yogurt. Add salt.

Kichidi (Rice & Lentils Dish)


I found a recipe for Kichidi on Rachel Singapogu's blog. I decided to make it. I had a lot of fun cooking Kichidi. I left out the green chilies as I did not happen to have them on hand. That being said, the dish did seem to maybe need something more . . . perhaps green chilies!

The New Favorite




We had Indian Cauliflower Curry twice this week. We didn't mind "one bit" having it twice. I think cauliflower curry must be a new favorite of ours! I'm glad it's a healthy new favorite.

Celery Curry With Cilantro


I had a lot of celery in my fridge, so I looked for a celery curry recipe on Rachel Singapogu's blog. I didn't find a recipe for celery. I did find one for Okra Curry. I thought something similar might work with celery. I tried the okra recipe with celery, and I thought dinner was fantastic. The recipe had a little too much cilantro in it for Anthony, but now I know for the next time. I think about 1 teaspoon of cilantro in a dish is all he can stand. I put 2 Tablespoons of fresh cilantro in our Celery Curry. Whoops.

Indian Shrimp Curry!


I found an awesome recipe for supper: My Indian Recipes' Shrimp Curry. I looked at a couple other shrimp curry recipes first: Food Network's Shrimp Curry, and AllRecipe's Indian Shrimp Curry Recipe. I thought the recipe on My Indian Recipes looked more like one Anthony and I would enjoy. Besides, I had most of the ingredients for that one, so I didn't have to "fudge" on my ingredients.

lentils w/ cilantro


I found out this evening that Anthony doesn't like cilantro. Just before dinner was served he hurriedly asked me if I could scrape the cilantro off the top of our lentils and rice. I was like, "sure, no problem."

Shari's Indian-Inspired Butternut Squash Curry


So my pastor's wife randomly awesomely gave me a butternut squash the other day. This evening I decided to use it for supper. My husband kindly chopped it up for me. I made a curry for it from Indian ingredients. I then compared my results to some similar recipes online: Butternut Squash & Coconut CurrySambhar, and Indian Summer Stew: Butternut Squash, Coconut, and Lentil Stew. Not bad! Our supper was perfect! Not too much or too little spicy. The dish tasted buttery. I would make it again.

Shari's Indian-Inspired Butternut Squash Curry:

1 TB Ghee
2 Dashes Hing
2 Tsp Tumeric
2 Tsp Minced Garlic
2 Tsp Ginger Paste

1/2 Ginormous Onion
1 TB Chobani Yogurt
2 Cups Water

1. Saute ghee and spices.
2. Add onion. Stir.
3. Add yogurt. Stir.
4. Add water. Stir.
5. Add butternut squash. Stir. Cover. Cook until soft. Mash with fork.
6. Simmer. Serve.
