Globs of Chocolate


Hmm . . . just found this mug cake adventure among my writing drafts . . . time to post . . . not sure when I wrote it . . .


Anthony and I had fun last night devouring a chocolate peanut butter mug cake he created. It was hilarious to watch it erupt and bake in the microwave. This time he did not put egg in it. We both liked it better without egg.

Larabar Cookies


This is my version of Peanut Butter Cookie Dough Cookies by chocolate-covered Katie. Her Peanut Butter Cookie Dough Cookies recipe was a modified version of her own Homemade Larabars recipe which was probably a spin off of Larabars. My revision of her revision is so delicious! I do not think my cookies are very healthy because eating them does not seem much different from eating peanut butter straight from the jar . . .

Larabar Cookies:

1/2 Creamy Peanut Butter
1/2 Whole Pitted Dates
2 TB Salted Dry-Roasted Peanuts
1/8 Tsp. Vanilla Extract
Dash of Salt

Shari's Easy Homemade Honey Nut Granola Bars




Shari's Easy Homemade Honey Nut Granola Bars:

oven- 325 degrees

chop & toast:

1/2 cup pecans
1/2 cup raw peanuts
1/2 cup dry-roasted & salted peanuts

combine nuts with:

2 cups quick oats
1/2 cup honey
1 tsp vanilla
1 tsp cinnamon
1 1/2 TB peanut butter

bake time- 27 min.


After having success developing my own granola bar recipe (PBJ Granola Bars) from theKitchn's granola bar recipe, I again used theKitchn's recipe as a springboard for creating another great new recipe (Shari's Easy Homemade Honey Nut Granola Bars).

"Garlandorf Salad"


We were in need of a midnight snack. I put the rest of our Chobani yogurt in a bowl. I sprinkled granola on top. I added dried date pieces, chopped McIntosh apple, green grapes, honey, and dry roasted and salted peanuts. After mixing it all up, we ate it. Anthony said our snack reminded him of an Apple Walnut/ Waldorf Salad that his Mom and Grandma have made. Since ours was a little different from the typical Waldorf Salad, I named it "Garlandorf Salad."

"Garlandorf Salad"

1 Cup Chobani Yogurt
1/4 Cup Granola
1/4 Cup Dried Date Pieces
1 Chopped McIntosh Apple
1 Cup of Green Grapes
Honey
1/4 Cup Dry Roasted & Salted Peanuts

pizza & granola bars


I found a new recipe for granola bars: the Kitchn's Hazelnut-Cocoa Granola Bars With Dried Figs. I just about completely changed the recipe to use only items I had on hand in my cabinets. I also tried not to add too many ingredients from the cupboards. I was selective. They turned out great.

PBJ Granola Bars:

3/4 Cups Raw Peanuts
2 Cups Quick Oats
1/2 Cup Dried Cranberries
1/2 Cup Maple Syrup
1/2 Peanut Butter
1/2 Tsp Cinnamon
1/4 Tsp Salt

How To Get Anthony To Eat Raw Strawberries


Last night was like many other nights, we needed our midnight snack. I thought maybe we could eat some bowls of berries but Anthony said he doesn't really like eating them raw, that they are too tart. I asked him if he had ever eaten strawberries and cream with brown sugar. He said he hadn't. I told him that my family and I first fell in love with the dish when we were at Disney World in Florida. Quite a few years back, we had eaten strawberries and cream as an appetizer for breakfast a number of times at one of our favorite breakfast spots there. Anthony agreed to give the dish a try.

I used milk instead of cream. One, because it's healthier, two, because that's all we had on hand, and three, now that I think about it, because to me it tastes better. We both enjoyed our lovely snack. The berries were sweet enough with the milk and sugar for Anthony to enjoy! I really liked the dish presentation that I fashioned. The pattern I made with the strawberries on our plates reminded me of Amish quilt squares.

Strawberries & Cream

6 Large Strawberries
4 Tsp. Brown Sugar
1/2 Cup of Milk

1. Sprinkle brown sugar on two plates.
2. Cut strawberries in half and arrange on plates.
3. Pour milk slowly on to plates.
