All-American

I'm not sure what got into me, but tonight when I pulled out the ingredients for our evening meal, I reached for butter, cheese, and more cheeses! "This is going to be good," I thought. Although you can hardly go wrong with the taste buds with these All-American artery-cloggin' ingredients, I rarely cook with them, much less all at once. Tonight, I put Mexican cheeses and butter in my fresh cooked spinach. I added yellow American cheese to my rice. I cooked my cod in butter and garlic.

How I Made Oven-Roasted Vegetables!


Anthony requested salads for supper for this evening after we had pizza and ice cream last night. I wanted to make some oven-roasted vegetables to go with our tuna salad and lettuce. I found All Recipe's Roasted Vegetables Recipe online. The only vegetable that I used that they used was an onion. Other than that one, I used all my own vegetables. They used squash, sweet potatoes etc. I used french green beans, baby tomatoes, mushrooms, and carrots. Further, I used dried herbs instead of fresh, but used the olive oil, balsamic vinegar, rosemary, thyme, salt, pepper, and the oven temp and time from the recipe. I thought the lettuce, tuna and oven-roasted veggies ensemble turned out great. I thoroughly enjoyed my hot and cold plate. Anthony said he probably would have liked rice with the vegetables better than salad. I blended some of the vegetables in a mini blender for baby Shastya. I smelled my freshly blended baby's food, and said I could blend the rest of tonight's vegetables to make a terrific pizza sauce. Anthony said maybe I could do that, tomorrow night!

3 Salad Wonder Wrap

 I tucked three delicious salads into our soft shell tortillas for supper! First, I ripped some crunchy kale for the bottom layer. Second, I mixed a can of tuna and some Ranch salad dressing together before dolloping these two combined ingredients on top of the greens for my second salad. Third, I added my own original fresh tomato garlic oatmeal salad. The wraps were unforgettably yummy. Anthony liked them too.

Ginger Mahi Mahi with Vegetables and Rice


I created this Asian flavored entree last night for supper. I half sauteed/ half poached two Mahi Mahi thawed filets, asparagus, and mushrooms in minced ginger, sesame oil, soy sauce, and water. I put this stir-fry over rice. My rice I cooked in some curry sauce I had made the other day. The meal was outstanding!

 Ginger Mahi Mahi

2 Mahi Mahi Filets Thawed
1/2 Cup Chopped Fresh Asparagus
1/2 Cup Chopped Fresh Mushrooms
1 1/2 TB Fresh Minced Ginger in Water
2 TB Sesame Oil
2 TB Soy Sauce
1 Cup Water
Salt & Pepper

Bengali Fish Curry


I bought some fish, haddock at the store for something different today. I was planning to make fish tacos, but Anthony asked if I could make fish curry. I thought that sounded like a great idea! I looked online for a recipe and found Yummly's Bengali Fish Curry. I made that. We really liked the recipe. It was fast and easy. I served the fish curry over rice.

Spring Break Fancy Dinner Date


Anthony and I had a great time preparing for and having a great date over spring break! Supper was unbelievably good. My favorite dish was the baked salmon. It was so thick and soft. I tried a new recipe for the salmon and the sweet potato casserole. Unfortunately, the sweet potato casserole had a disgusting stick-and-a-half of butter in it. It tasted like pecan pie or shortbread. That dish was certainly our dessert as I did not make dessert technically. We had an awesome night. It reminded me of our fancy Valentine's date when we were dating.
