3 Salad Wonder Wrap

 I tucked three delicious salads into our soft shell tortillas for supper! First, I ripped some crunchy kale for the bottom layer. Second, I mixed a can of tuna and some Ranch salad dressing together before dolloping these two combined ingredients on top of the greens for my second salad. Third, I added my own original fresh tomato garlic oatmeal salad. The wraps were unforgettably yummy. Anthony liked them too.

Russian Raw Garlic and Tomato Sandwich


The Russian raw garlic and tomato sandwich is only for serious health-conscience eaters or for any person that can acquire a taste for anything. I learned this secret recipe many years ago from one of my Russian instructors during cold/flu season. Raw garlic is a natural remedy for colds and the flu.

Nutritious Lunch


Gorgeous and tasty my nutrient-laden lunch was quite the colorful contrast of reds and greens. I prepared a whole-wheat wrap with green leaf lettuce, 1 roma tomato, and 1 avocado for my entree. I put together a beautiful sweet plate of 1/2 a juicy red grapefruit, 2 chopped large double-wide red strawberries, and a small cluster of succulent green grapes. I was overjoyed and astonished that the fruit and vegetables were so perfect and ripe during the winter. My husband said that they were probably from California or Florida.

Avocado Sandwich



I was surprised to find my avocado sandwich reminded me of an egg salad sandwich, the taste and feel. Avocados and eggs are both mild in flavor and take on the characteristics of the seasonings one adds to them. My ripe avocado was creamy not unlike the combination of a boiled egg and mayo mixed together. I added minced garlic, salt, and pepper to my avocado sandwich. I wouldn't mind having such a sandwich again.

Fried Bologna Subwich


Anthony likes hot sandwiches so I made him one from the food supply we had on hand. I am avoiding saturated fat so I ate leftover green tea & lime rice for supper. Sawing the sub roll open with a serrated knife reminded me of my days as a sandwich chef at Tony's Little Italy in Huntsville, AL.

Fried Bologna Subwich:

1 Wheat Sub
2 Pieces Bologna
2 Pieces Yellow American Cheese
1 Piece of Romaine Lettuce
1 Tb Bacon Ranch

Food Experimentation: Citrus Infused Grilled Carrot Sandwich


Not sure exactly how I came up with this one. I suspect it had something to do with the flavor profile of the last sandwich I ate: apple, lettuce, & spicy mustard on honey-wheat. There's something about sweet, savory, & spicy that just works. I also saw a similar juice flavor profile on Pinterest today when I was adding a new board which I titled "Juice." 

And so today for lunch, between feeding the baby, taking and making phone calls, doing laundry, catching up on Facebook, Gmail, Pinterest etc. while taking care of my baby I made a special grilled sandwich.

The first bite was awful. After I removed the bitter grilled oranges the sandwich became epic. The citrus and ginger infused grilled carrots accompanied with horseradish sauce and toasted honey-wheat bread were definitely award winners. I will have to make this toasted sandwich again. Below I will list the ingredients I made it with, in case you would like to try making this experience for the taste buds:

2 Slices Honey-Wheat
1 Thinly Sliced Orange
2 Thinly Sliced Carrots
A Few Dashes of Ground Ginger
2 Tsp. Horseradish Sauce

Sandwich Night



Last night on our way home from church we were discussing what kind of snack to have. Anthony thought spicy grilled cheese sounded good for him. I was having a little more trouble coming up with a sandwich for me. Finally, I thought of something: apple, lettuce, and spicy mustard on honey-wheat. Anthony made our sandwiches. They turned out very well. He would not try a bite of my sandwich. He didn't think it sounded very tasty. I think I'll ask for it again though. I rather liked it. The Granny Smith apple was very tart complementing the spicy mustard so profoundly as to make a rather savory grilled sandwich.



Apple Sandwich:

2 Slices Honey-Wheat Bread
1 Thinly-sliced Granny Smith Apple
2 Leaves Romaine Lettuce
2 Tsp. Spicy Mustard

Spicy Grilled Cheese:

2 Slices Honey-Wheat Bread
1 Slice Pepper-jack Cheese
1 Slice American Cheese
3 Tsp. Grated Parmesan Cheese
A Few Dashes of Red Pepper Flakes
A Few Dashes of Cayenne Pepper
2 Leaves of Romaine Lettuce
1 Tb. Chipotle Ranch Salad Dressing

Open Faced Hot Turkey And Gravy Sandwiches



Who doesn't love a good ol' hot turkey and gravy sandwich after Thanksgiving? This sandwich is a great American tradition in the north and the south. I discovered this upon discussing the sandwich at lunch with my husband. He's from the south, and I am from the north. Both of us remember eating these fabulous sandwiches after the holidays. We also have memories of these sandwiches being standard fare at diners across the U.S.

Lunch

I wasn't hungry for lunch but I made a sandwich for Anthony. I sprayed a skillet with oil, dumped some minced garlic in it, put five slices of smoked lunch meat ham in it, and two slices of bread. I let it grill on high and sprinkled it all with cajun seasoning, turning them ever so often. I added a slice of yellow american cheese, chipotle ranch salad dressing, and lettuce to Anthony's sandwich. I washed some carrots, and cut the ends off of them for a side item. I helped Anthony eat the carrots:)

Sandwich, Knot, and Bar

Today I sent along a peanut butter and jelly sandwich, a garlic knot, and a chocolate chip protein bar for Anthony's lunch and snack pack. We have lots of breads and bagels in the freezer since I loaded up on groceries a couple weeks ago just in case I had the baby early. I just pulled a couple slices of bread from the freezer, stuck them in the toaster, then they were sandwich ready. Creamy peanut butter and red plum jelly completed Anthony's sandwich. I wasn't very hungry so I just had an apple with peanut butter for my lunch.

Anthony Makes Grilled Ham & Cheese Surprise Sandwiches

Today Anthony made grilled ham and cheese surprise sandwiches for lunch. I say surprise because I saw him making them, but when I bit into my sandwich there was a secret ingredient I had not seen added. That ingredient was salsa. There were also a couple of other ingredients that added lots of flavor, bacon and parmesan.

PBJ with Honey Roasted Peanuts

Today I asked Anthony what he wanted me to pack for his lunch. He didn't know. To help him out I gave him some options, one purposefully bad to make it easier to narrow it down! I asked if he wanted peanut butter and jelly, ham and cheese, or ham and cheese with honey roasted peanuts. He said he wanted peanut butter and jelly with honey roasted peanuts. I asked him what kind of jelly, red plum or blackberry if we had any left. He of course wanted his favorite, Blackburn's Blackberry.

Taco Burgers

I bought a 3 lb. tube of ground beef when I was at Aldi on Monday. Tonight, I needed to divide up that meat and freeze some. I bought so much because I was stocking up on groceries since I'm supposed to have a baby in a little over two weeks. I wanted to make sure my husband has enough food while I'm recovering and doesn't starve.

After I divided up the meat, I froze two parts, refrigerated one part, and used the remaining meat in the taco burgers. Anthony named the burgers taco burgers because I put tortilla chips in them and they tasted kind of like tacos. Yum.


Taco Burgers
