Fusion Cuisine: Baked Purple Cabbage Egg Rolls With Fresh Homemade Guacamole


I created this combination and it worked! Anthony and I really enjoyed this fusion meal. He doesn't usually care what I put together as long as it's tasty!

Baked Purple Cabbage Egg Rolls:

8 Carrots Grated
1 Onion Chopped
2 TB Sesame Oil
2 TB Soy Sauce
Salt & Pepper

1/2 Head of Purple Cabbage Chopped
2 Cups Water

Egg Roll Wrappers

1. Combine first five ingredients in bowl. Transfer ingredients to skillet. Add cabbage and water. Cook down slightly.
2. Grease pans. Roll up egg roll filling in egg roll wrappers. Brush with olive oil. Sprinkle with salt. Bake for 15-20 minutes at 400 degrees.

Fresh homemade Guacamole:

2 Ripe Avocados
1 Lime

1. Peel avocados and remove pit.
2. Cut lime in quarters. Squeeze lime juice over avocado pieces. Mash and mix.


















Shastya and the Toilet Paper

Shastya is just over eight months old. I was letting Shastya play with a roll of toilet paper on the floor while I did my hair at the mirror in our bathroom. I have let her play with toilet paper before, but this was the first time she unraveled the roll. The next thing I knew it, she was standing next to the toilet, scooping up the toilet paper and trying to get it in the toilet! Wow. She puts things together. The toilet paper was all connected so she couldn't get it into the toilet. I ripped off some and handed it to her, into the toilet she slipped the toilet paper. The toilet paper began to slip beneath the surface of the water. Shastya cried out and tried to retrieve it! I stopped her. Shastya is so bright and funny. She keeps us laughing.

Rabun Bald, GA: Missing The Sunrise

The plan was to arise at 3 a.m. to drive from South Carolina to Georgia to see the sunrise from the fire tower at Rabun Bald, GA. We ended up getting lost. What could have been an hour and forty minute trip to the hiking trail turned into a three hour trip. For a good part of the three hours I was car sick. We were winding around gravel roads. We in fact missed the sunrise. I thought it was hilarious that we missed it after getting up at 3 a.m. to see it. I was also very glad that we did not have to make the hike in the dark, in unfamiliar territory with the threats of bears, snakes, and insects. We will probably go back another time for a sunrise or sunset there. I think I will enjoy one of those now that we have seen the trail in the daylight. Although what we hiked was short in comparison, we found out there was a half marathon going on which included our trail while we were adventuring. The runners were very friendly and added a peppiness to our day. When we got to the top of the fire tower we could see many mountains, the beautiful sky, and clouds! I took pictures with our phone as usual. Our friend Qing also took pictures. Her pictures are brighter, taken with a fancy camera. Our hiking group included Qing, Ivan, and Vijay, who are some of Anthony's friends from CEDAR (Clemson Engineering Design Applications Research), Anthony's friend James from UBC (University Baptist Church), and our family.

Shastya Goes To Clemson

Last night, we went for a walk on Clemson campus after church. Shastya loved the Clemson tiger statues, the fireflies at dusk, and the new library furniture. It was so much fun watching Daddy chase the fireflies.
