Anthony & Shari's Hearty Oatmeal
So we woke up late, made the bed and rushed into the kitchen. Anthony started pouring water in the coffeemaker while I started setting milk, mugs, and Dunkin Donuts French Vanilla coffee grounds down on the counter beside him. We had already discussed having oatmeal for breakfast and I had mentioned putting an apple in it. I scurried dangerously across the kitchen floor to the island with a little knife, cutting board and small gala apple. Anthony yanked raisins and roasted almonds out of the cabinet and set them on the island beside me. I chopped the apple so quickly I made mention of chopping everything except my fingers. Into the bowl it all went, with rolled oats, 1 Tb of raisins, maybe 15 chopped almonds, 2% milk, a couple dashes of salt, and a little brown sugar. We baked it for 5 minutes in the microwave and then poured some more milk on it before chowing down. Delicious, nutritious breakfast:)

So our first Valentine's Day was epic and unforgettable, unrepeatable. That being said, I thought I'd post a few pics. Don't mind me, I'm just a little sentimental since we just had our first wedding anniversary.
Fried Rice
Gotta love fried rice. We have it all the time with whatever's on hand. Anthony and I made fried rice together on our first date! Today for lunch I chopped 1/3 a head of cauliflower, a head of romaine lettuce, a fresh garden tomato, half a vidalia onion, a couple cloves of garlic and a couple sticks of turkey sausage jerky. While I was doing that I had a cup of jasmine rice, a Tb of oil, salt to taste and maybe 1 3/4 cups of water coming to a boil in a sm saucepan w/ lid on high on the stove. Once my rice came to a boil, I stirred it, turned the heat to low, and left it sit there 5 min. During the next 5 min. I cooked my veggies and viddles, except the romaine, on high in a non-stick large skillet in about a couple Tbs each of teriyaki, soy, and oil. I took the rice off the heat, then threw the chopped romaine in with the other cooked items. Finally I added the rice and stirred everything over low heat maybe two minutes. Don't forget to mound fried rice on plates and serve with chopsticks:)

What better way for a foodie to start a blog than with food. This here is my Mom's recipe for chicken crumb casserole. I cooked it for Anthony while we were dating and he loved it. I made it again the other day when we had company over.
