#Food Fusion #Curry #Beef Stroganoff

Tonight I made curried beef stroganoff. Amazing. I would highly recommend. What next? Curried chocolate chip cookies? Curried pumpkin pie? Time will tell.


Curried Beef Stroganoff

Ground Beef
Garlic Cloves Chopped
Small Sweet Onion
Curry Powder
Red Pepper Flakes
Salt & Pepper
Plain Yogurt



  






We added some parmesan cheese for a condiment.

Creative Mac & Cheese Plus Salad Equals Lunch

Yes, I actually did open another packet of ramen noodles and put them in a bowl of water which I then put in the microwave on high for five minutes. I drained my noodles, and ripped up a couple of slices of american cheese into them. I stirred the cheese and noodles until all the cheese was melted. I made a carrot, cucumber, and lettuce salad to balance our lunch.

Poor Man's Pasta Alfredo & Chicken Cutlet

So I was on my own for lunch today after packing my husband a bag lunch to take to grad school. I was in the mood for some good ole' comfort food. I resorted to, I know, the terribly unhealthy ramen noodles. I heated them in a bowl with water in the microwave for five minutes. I tossed the wrapper and seasoning packet in the trash. When the noodles were ready, I put butter and parmesan cheese on them. I heated a chicken patty in the microwave for two minutes. When it was done, I put it on top of my buttered noodles and dusted it with salt, pepper, and oregano. This pregnant girl enjoyed her lunch.

The Making of Fresh Homemade Vegetable Lasagna

When I was at Big Lots the other day I was inspired by the recipe on the back of a Procino-Rossi lasagna noodles box. I bought the noodles and purchased most of the rest of the ingredients listed in the recipe except the sausage. I decided to substitute vegetables for the sausage.





I really liked the method on the P&R box for draining the noodles on a baking sheet between paper towel layers. I was pleasantly surprised that the noodles did not stick to the paper towels. This method also kept the noodles from making the lasagna watery.



I had a lot of fun with my assembly line layering all the ingredients. I enjoyed the organization that went in to it all.








 

I made Caesar salads for our first course. 



We felt like we were at Olive Garden.

Grown Ups Gourmet Mac & Cheese

I made up a new recipe tonight. We liked it. All the ingredients just happened to be around. They included:

-1/2 box whole wheat rotini pasta
-2 Tb butter
-1/2 stick cream cheese
-1 can evaporated milk
-salt
-pepper
-cornmeal (for thickener)
-grated Parmesan cheese

Pasta Primavera Casserole

I combined last night's leftovers from carbonara light with steamed vegetables leftover from a couple of nights ago and let them heat up on the stove. I broke up tortilla chips on top for a layer of crunch. Not bad.

Carbonara Light after Class

So tonight I sauteed some bacon pieces in olive oil then added yogurt and salsa.  Next, I poured water, a bag of frozen peas, and a box of whole wheat thin spaghetti into the pot. I put the lid on our dinner to bring it to a boil. I really am not a huge fan of whole wheat pasta, but I eat it sometimes because it's healthy. To me, it tastes kind of like cardboard, but I was hoping that between the bacon and salsa something would give the pasta some flavor. I just figured I'd let the concoction cook on the stove awhile while I waited for Anthony to get back from class. I tried a bite at one point, and it still needed a lot of something or some things. I added cayenne, salt, Parmesan, and minced garlic before again putting the lid on it. When we sat down to eat I was pleasantly surprised that Carbonara Light was a success.
